But Ken, according to the recipe, one person would not be consuming 3 cups of cheese. The recipe is written for 6 servings. That would be 1/2 c cheese, 1/2 oz cream cheese, and less than 1 Tb of butter- all within the recommended guide lines for daily consumption.
True, a person should plan ahead and figure their daily intake accordingly- perhaps a salad for lunch if you’re going to eat Mac and Cheese for dinner?

What was the criteria for choosing these “healthy” recipes? Many of the main dishes listed are high in fat and calories. Your stove top mac and cheese has 3 cups of cheese, 3 oz of cream cheese and 4 tbsp of butter. What is healthy about this? You also included a large selection of sweets and desserts which are not nutrient dense foods.

I believe that all foods can fit into a healthy diet and moderation is key but to title this list of recipes as “healthy” is very misleading and also very confusing. Could you please explain how these dishes are healthy?
